In most cases, foodservice equipment dealers who bid design work submit a lower percentage fee than consultants. For example, if a Consultant sets his/her fee at 5%, an equipment dealer may set theirs at 3%. The lower percentage is attractive but here’s the difference. Consultants control the budget of a project by setting the cost during design, which dealers attempt to hold to in the bidding process. It is the responsibility of the consultant to ensure the bids submitted by dealers are equal to the specifications and project design. Dealers, on the other hand, have no one to answer to other than themselves. They design the project, set the budget, and generally provide equipment by manufacturers who give them the best discounts, install the equipment and service it in most cases. Though their fee is usually lower than consultants, the difference is made up with the additional services provided and is more costly in the long run.
